For this small Australian distillery based in the Yarra Valley, it's 1) The Four Pillars copper-pot still, known as Wilma; 2) the triple-filtered Yarra Valley water; 3) botanicals, including locally-sourced Tasmanian pepperberry and lemon myrtle, exotic cinnamon, cardamom, coriander seeds and star anise, and the classic juniper, lavender, angelica root, as well as whole oranges; and 4) the distillers love for what they do and what they have made. This is a striking, full-flavoured summery drink.
